The menu reflects Northern Norway, featuring locally sourced ingredients that showcase the region's fjords, mountains, and forests. The dining experience is a communal affair that evolves with the seasons. Vegetables are picked from the garden, and berries and wild ingredients are gathered from the mountains and forests. All animal products come from well-treated animals, whether in the woods, on local farms, or in the sea. Collaboration with local farmers, hunters, and fishermen ensures the highest quality and freshness.
Johnny Trasti is the brain, hand, and heart behind most of the flavor experiences at Trasti & Trine. Over 30 years in the kitchen have endowed him with experience, knowledge, and instinct in abundance. Nevertheless, he is still on an eternal quest for the perfect meal with the best ingredients and most unique flavors. He aims to convey this to guests through experiences, cooking classes, and dinners at Trasti & Trine.
