Tollbua is situated in a beautifully renovated building from 1910, which once housed the customs office in Trondheim. Today, it is the new venture of Christopher W. Davidsen, the Bocuse d'Or silver medalist of 2017, who chose to establish his latest concept here after several years leading the kitchen at Speilsalen in the Britannia Hotel.

Tollbua has quickly become one of Trondheim's most exciting culinary destinations. With a menu that changes according to season and availability, the skilled chefs at Tollbua create exquisite dishes using top-quality local ingredients, playfully and innovatively combined with international flavors. Quality is always at the forefront. The restaurant also boasts one of the city's best wine cellars, led by sommelier Henrik Dahl Jahnsen, a five-time Norwegian champion sommelier, ensuring exceptional food and wine pairings.

Both Davidsen and Jahnsen played crucial roles in establishing Speilsalen, which earned a Michelin star just one year after its debut. Similarly, Tollbua has garnered enthusiastic praise in the Michelin guide, just three months after opening. The guide particularly commends the restaurant’s exceptional use of local ingredients as a standout feature.

In addition to 4- and 6-course evening menus, Tollbua also offers a lounge menu, perfect for those who want some delicious bites with their drink. On Saturdays, you can enjoy a delightful 3-course lunch, served with a smile, enthusiasm, and perfectly paired drinks. The menu changes regularly based on the season and availability.
